I have had multiple recipes for agua fresca saved in my bookmarks for the longest time, and recently I finally decided to give one a try. What a good choice! This one is strawberry vanilla, but I can’t wait to explore other fruits. I made this right after we finished off the pitcher of strawberry lemonade, and it was nice to have that delicious strawberry flavor without all of the sugar. I think it is going to have to be watermelon or peaches next. Perfect summer refreshment!
Strawberry Vanilla Agua Fresca via Vanilla & Lace
Ingredients:
- 1 pound strawberries, hulled
- 4 cups ice-cold water, divided
- scant 1/8 teaspoon vanilla extract
- 5 tablespoons fresh lemon juice
- 2 tablespoons honey
- Ice, for serving
Directions:
In a blender/food processor, combine the strawberries with 2 cups of the water and the vanilla extract. Puree until completely liquid. Strain the mixture through a fine-mesh sieve or through cheesecloth into a pitcher. Stir in the remaining 2 cups water, lemon juice and honey. Taste and adjust honey to your preference
