And Life Goes On

IMG_8202s

Where did summer go?!  I can’t believe we are halfway through July already!  Life has been so busy, and I am ready for some relaxation time.  Unfortunately , that won’t be happening anytime soon.  Summer school, bridal shop, holidays, family visits, travel plans, lesson planning, beach trips, finishing multiple projects what a whirlwind!  Not to mention the on going job hunt, attending weddings, and just trying to fit some sleep in there somewhere.  I have to admit, some things I really do love, like family visits, and beach trips, but I’m getting a little worn out.  At least my computer is up and running again!  I love apple and their quickness with those things.

Now that I have 2 seconds to get an update on here I can update you on my new summer love.  Summery beverages!  This past week my sister came out to visit and we made some watermelon margaritas (they needed a little perfecting, but they were refreshing), a few weeks ago it was strawberry lemonade and agua fresca.  They never last long around here…Mostly because I am in Love!

Ingredients:

  • 1 pint strawberries (cleaned, hulled and quartered)
  • 1 cup fresh lemon juice (7 lemons or so).
  • 1 cup sugar
  • 4 cups water

Directions:

Squeeze the lemons to get 1 cup lemon juice.  In a food processor, put the cleaned and hulled strawberries, puree them into a paste. Run the strawberry puree through a fine mesh strainer to remove any large chunks of strawberries that may be left.  In a pot, heat 1 cup sugar with 1 cup water until the sugar is completely dissolved. Let cool. Combine with lemon juice, strawberry puree, and 3 cups water. Stir and put in your favorite container. You can drink immediately over ice or let chill in the refrigerator.
